Gentlemen:
This letter will introduce to you J. Cook and D. Toedt better known in business
procedures as Ajax, Inc. and Toedt, Inc. We are hereby asking your permission
to engage in a new business venture known as South Lake Steak House. The opera-
tion will consist of steaks and a limited seafood menu to be served with mixed
drinks, beer and wine. As you can see by the information, we are not new to
the industry. I have been in the business for 20 years and D. Toedt related
to the business for 25 years. We have already been approved by the state for
the liquor license required for the City of Southlake.
We now need your approval so we can be open by July 10th if possible. Your
cooperation in helping us reach the July 10th opening will be greatly appreciated.

The multi-product line consisted of a wide variety of snacks in flexible packaging as well as a multi-
institutional hard-goods line in barbecue sauce, dressings, mustards, mayonnaise and various spices.
Manufacturing
• Initiated a complete turn-around of a non-profitable manufacturing facility to a pro-
fitable facility with bottom-line return of 11.5% before taxes.
• Introduced controls which assured a high quality product on a consistent basis.
• Reduced both direct and indirect labor through motivation and automation reflec-
ting 15% savings.
• Standardized and implemented an inventory control system which reduced
warehousing, obsolescence and costs associated with excessive inventories.
• Implemented a plan for gradually updating plant machinery and installation of bulk
handling equipment.
• Arranged and supervised the consolidation of branch

and Local inspection agencies. Instituted positive programs in conjunction with
OSHA - Arranged through an independent inspection agency which was sanction-
ed by the USDA to approve the manufacture of meat processing machinery in com-
pliance with food and health standards.

• Negotiated fleet and semi-trailer lease arrangement causing a reduction in mileage
costs of 12 -15
• Increased back-hauls of fleet operations which further decreased freight costs.

James M. Cook is in the process of completing a res-
taurant in Southlake Shopping Center in Southlake, Texas.
Incidental to the operation of the restaurant, Mr. Cook
intends to offer mixed beverages to the customers of the
restaurant who are members of the private club. The South-
lake Steak House, having a private club operated on its
premises, would be operated under the very strict rules,
L regulations and supervision of the Texas Alcoholic Beverage
Commission.
Mr. Cook has been engaged in the business of operating
various restaurants during all of his adult life, and I
consider him to be a highly professional and reputable
restauranteur. It has been my pleasure to have Mr. Cook as
a close personal friend as well as client for approximately
ten years. During the years that I have known Mr. Cook, I
have been a customer of restaurants owned and/or operated by
Mr. Cook, and can personally attest to the high quality,
fine food and service with which Mr. Cook conducts his
operations. In this connection, I have taken a number of my
other clients to eat at Mr. Cook's restaurants and they have
invariably been impressed with the high standards in food
and service found at all restaurants with which Mr. Cook has
had association.
